Beetroot Dip or Salad

Beetroot is rich in Betaine, dietary nitrate (for beneficial Nitric Oxide) and antioxidants(the rich colour is an indicator of this) great for cardiovascular health and supporting blood pressure reduction.

Raw onion is full of Quercetin, supporting healthy immune function. Choose a health giving oil like Extra Virgin Olive or Organic Flaxseed Oil – both heart healthy options!

Ingredients 2x fresh raw beetroot, scrub well with veggie brush and rinse, grate - can use a jar of organic beetroot slices(no sugar) or tinned as last resort(often added sugar, still some benefits). 100g organic fetta cheese(marinated goat fetta, like Meredith is great!) chopped or suitable 'cheese' alternative 1x Red onion, peeled and grated or very finely sliced and diced. Pinch Himalayan or Celtic salt to taste(optional). 1 dessertspoon or 'glug' of Organic Extra Virgin Olive Oil(own lovely flavour, cardiovascular health) or flaxseed oil(nutty flavour, vegetarian omega 3 boost) Option: 2x carrots, grated for salad option.

DIP Combine all ingredients in a blender, food processor or Thermomix or if handmade – very finely chop all ingredients and stir together. Whiz ingredients further for a finer dip texture. Could add Tofutti soy cream cheese instead of fetta for a vegan dip.

SALAD This can actually be a salad like fine coleslaw by adding in 2 grated carrots for this option, and if wanting dairy free try adding orange juice as a dressing. Sprinkle with some desiccated coconut, looks great! Top a baked potato and grind of cracked pepper or as a side salad with fish and a squeeze of lemon. Yum!
